That breaks my heart too, because you have to know that deep down Dean thinks his brother would never have spoken to him again if Jess hadn't died.
The thing about Dean being there for Sam after Jess died is - Dean had seen someone spiral before, to a place where nothing mattered except revenge. And Dean views Sam as the one with the good heart, who wouldn't hurt anyone, so to see Sam start to lose a little bit of that, I think it really bothered him.
And I'm dying for a scene where Sam tells Dean what he deserves to know - that he does love his brother, that nothing Dean can do will make Sam not to love him. And that Dean's soul is worth just as much as Sam's is.
I kind of think all those demons in hell were jumping all over themselves to get at Dean's soul when they made the deal, because there was no way they would have been able to touch it otherwise.
